The following excerpt is from part four of this series. In this segment I will discuss chocolate making equipment for launching your business.

Equipping Yourself

The first step is to get an idea of what you will need to produce your chocolates. Don't rush out to spend all the money you haven't earned yet and start with as small an investment as possible. If you are an experienced chocolate maker you likely have most of what you need anyway. This is a general list and depending on your product line you may not need all of the items listed.

Double Boiler
I always use a double boiler as I find it easier to work with and it never ruins the chocolate. Although a microwave will melt the chocolate a bit faster, it will also harden faster in the bowl so you have a shorter working time with it. It is much easier to burn the chocolate in a microwave as well.

My preference is a commercial double boiler because of the easy to handle size and convenient handle. If you are on a tight budget you can make your own double boiler by placing a heat resistant bowl atop a pot with some water in it. The bowl method works just as well but is less convenient for handling.
